Zuppa Toscana for Weight Loss (Low Carb, Keto)

This might be the community’s favorite soup, just based on the mountains of posts we get across social media. It is certainly easy to make and delicious. The point that we can also lose weight eating it is just a great, unexpected universe.

Take the recipe and run, or soak in some of the extra awesome tidbits associated with this popular soup.

The Eat Like a Bear version of this popular soup concept, in fact, has been called a “Triple Threat” in weight loss.

The 16-Second Version of the Zuppa Toscana Recipe 😉

Zuppa Toscana, Low Carb, One Meal Model

This is a low carb version of the classic Zuppa Toscana and is based on a "one meal a day" model. If you eat more than one meal a day, you will not likely eat this entire serving. 🙂
Prep Time 10 minutes
Cook Time 25 minutes
Servings 1

Ingredients
  

  • 8 ounces Ground sausage cooked
  • 1 quart Beef broth
  • 12 ounces Cauliflower frozen
  • 1 cup Kale
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup cream
  • 4 slices bacon

Instructions
 

  • Set aside the cream and bacon to add at the end.
  • Combine ingredients in a skillet or sauce pan.
  • Heat on medium heat for about 25 minutes, or until the cauliflower reaches the texture you desire.
  • When cooked, add cream and bacon to finish.

Triple Threat in Weight Loss

Yes indeed. A “Triple Threat.”

Leave it to the editors at Woman’s World magazine and their marketing flair to pin this label right on our lapel.

Clutching the bouquets for the first and last time in history I will be called anything like a “triple threat.” And, no, of course I cannot sing, dance, nor act…

Woman’s World highlighted three components of the soup as the “Triple Threat”: Low carb, intermittent fasting, and a fat-blocking nutrient in the green. A better “third” is the calorie-mindedness of the recipe as a whole, which surely has a far bigger impact than a cup of greens.

Then again, I’ll just take all four of those factors, glance down at my pants that still fit, and smile. 😉

Yes, the Woman’s World feature was the fourth of seven features in 18 months of Eat Like a Bear community members in Woman’s World magazine. Woman’s World loves stories of older women losing weight and, it turns out that Eat Like a Bear is extra-good at that.

I asked if our feature rate is their highest. No, in fact, that distinction may go instead to Dr. Oz. 🙂

The Green? Does it Have to be Kale?

You probably already know the answer: It is whatever green you have around. I almost always have frozen spinach leaves, ready to add in a pinch. You too may keep some handy. You may well have some frozen kale leaves.

If we’re going to get extra-awesome with the green stuff, bonus points if you’ve actually harvested it yourself. 🙂

The “Century Bear” Count

Just as an aside because we are especially proud of this point: Since Eat Like a Bear was founded in July 2018, we have had historic levels of success in shedding 100+ pounds. Sure, we have people who have less than that to lose and they are meeting their goals too, but we have a special list for our Century Bears (here, CLICK!).
