Zuppa Toscana, Low Carb, One Meal Model

This is a low carb version of the classic Zuppa Toscana and is based on a "one meal a day" model. If you eat more than one meal a day, you will not likely eat this entire serving. :)

Ingredients
  

  • 8 ounces Ground sausage cooked
  • 1 quart Beef broth
  • 12 ounces Cauliflower frozen
  • 1 cup Kale
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup cream
  • 4 slices bacon

Method
 

  1. Set aside the cream and bacon to add at the end.
  2. Combine ingredients in a skillet or sauce pan.
  3. Heat on medium heat for about 25 minutes, or until the cauliflower reaches the texture you desire.
  4. When cooked, add cream and bacon to finish.
