Low Carb (Keto) Big Mac Special Sauce Copy Cat
I present to you your own copycat of the Big Mac Special Sauce, keto-style.
First, I was hesitant to dip a toe into this world because I have not eaten at McDonalds since 1994. It would be even longer than that but it was the day of the O.J. Simpson verdict and a group of friends and I walked back to my grad school apartment to watch it, stopping for lunch on Kirkwood Avenue in Bloomington, Indiana on the way. Literally nothing else was open but Mc Donalds. I am not exaggerating to say that all shops were closed. Everyone was home to watch the noon verdict that day. We got burgers and walked to the apartment to see the case that had apparently captivated all of American and caused me indirectly to eat at McDonald’s.
Many others have paved the McDonald’s copycat recipe path and I thank them for their work. There is a notion that the special sauce is just a version of French dressing but it is not. The special sauce combines some very simple yet distinct flavors.
I’ll give Mickey Ds this: It knows something about flavor. When I have used this on various Mc Donalds-inspired recipes, the flavor combinations are just spectacular and hit you emotionally in a pretty deep place of comfort. I have enjoyed using this dressing on sandwiches, salads, and pizzas. Combined with a lightly seasoned beef and cheddar cheese, this just works. It’s simple as heck too. I make extra and keep a stash, eating it liberally for a week or so until I cycle another dressing flavor through my refrigerator.
This recipe makes about 2 1/2 cups of dressing which is enough for a nice little stash for one person. It would make about four servings for me. As for keeping it keto, watch the mayonnaise. Some mayonnaise brands add sugar but you can certainly find some low carb options without. You also want to use an unsweetened pickle for this. Check that label as well.
